JACOB’S CATTLE BEANS: The flavour of Jacob's cattle bean is described as fruity, rich, and nutty, and the texture is dense and meaty. They hold their shape well under long cooking times and maintain their flavor even with heavy seasoning. The bean is usually used in baked beans, soups and stews.
SOLDIER (or RED EYE) BEANS: The mild flavor and firm texture of Soldier Beans makes them versatile and great for soups, BBQ baked beans, salads and casseroles. They can substitute for almost any white bean in your recipes.
YELLOW EYED BEANS: These are a delicious, creamy type bean with an obvious yellow/orange “eye” around the hilum. Cooked, they are soft and melt-in-your-mouth smooth, so wonderful in soups, refried beans, Mexican dishes, and creamy dips. They are mild enough that they'll take on any of the flavors you use during cooking.
