A Taste of the Land,” is genuinely applicable when talking about Fox Hill products. The salty marsh of the Wellington Dyke and the fruitful land surrounding Fox Hill Farm, where most of our forage is grown, results in a uniquely flavored feed for our cows. This flavor and composition are apparent in our array of high-quality cheeses:

Gouda is a semi-hard cheese is quite mild in flavor when it is young but acquires a slight sharpness as it ages. Our gouda melts wonderfully and is a perfect choice for lunch or as a snack with fruit.

Havarti is mild and creamy. Typically, a sandwich cheese, it can be consumed with tomatoes and pickles. It is delicious served with local ice wine, fruit, and dark chocolate.

As our (Cheddar Style) Burrows Bounty ages, it develops a slight lingering sharpness on the palate. Excellent to use in soups and casseroles, it is a white cheese without the dyes of "orange" cheddar.
